With our Paleo challenge in full swing, I have been forced to find new snack foods. Goodbye Swedish fish, hello- kale chips? Okay, so I’m not going to lie to you and say that I don’t miss candy fix, but I must admit these kale chips actually turned out to be tasty! They are also really simple to make. The hardest part is washing and chopping the kale and then waiting for it to dry. Thankfully Trader Joe’s offers pre-washed and cut kale- hooray for convenience! Just mix the kale with some olive oil and salt and bake for 15 minutes at 325F.

I made one batch with just salt and oil, and then for the next batch I added some wasabi powder. Both were yummy. I am excited to try out some other combinations. Garlic powder, curry, lime, maybe cheese? This kale thing might actually be growing on me! Do you have any kale chip recipes I should try?
