On my recent trip to Alabama, Steve suggested I read “the Wheat Belly”, a book about wheat and all of its’ damaging effects on our bodies. Although it didn’t sound as appealing as a good chick lit novel (i.e. Chasing Harry Winston. Read it.) I somewhat reluctantly agreed. Steve has been gluten-free for a few months now and I thought it would help me better understand the reasons behind giving up such beloved foods as bagels and pizza.
What started out as an obligatory read quickly turned in to an interesting and alarming study on genetically modified foods and the wacky way our body reacts to them, especially- you guessed it- wheat. One of the most startling facts revealed in the book is that wheat bread spikes your blood sugar as much as table sugar- yikes! Author and Doctor, William Davis, does a good job of mixing humor with high level science to make his claim that eliminating wheat from one’s diet will result in a myriad of positive changes. He also uses a lot of case studies of patients who came to him with various ailments that were cured simply by eliminating wheat from their diets. These cases were enough to convince me to try it out. I plan on joining the gluten free bandwagon for a few months and seeing how/if my body reacts to the change. At that point I can evaluate it objectively to see what works best for me. I am in no way saying that everyone should stop eating wheat immediately, but I definitely recommend this book to anyone who is interested in learning more about what you eat and how it may affect your body and your life.
Now off to look up some gluten free dessert recipes…
